I used to ‘dislike’ spaghetti, until I realized it wasn’t the pasta’s fault, I just didn’t like jarred tomato sauces. Tonight’s farm-fresh meal will be panko-crusted chicken with a simple tomato sauce, using the baby Roma Tomatoes and the Basil from Kula Fields.
Recipe: In a small pot, heat up a little olive oil over medium heat. Add in two crushed cloves of garlic. Cook for a minute or two, then add in a pint of grape, cherry or baby roma tomatoes. Stir and cover. Shake every couple minutes, checking after 5 or so. The tomatoes will pop, and you can also crush them a little with a wooden spoon. Add in a handful of torn basil and serve over chicken, pasta, or whatever! This sauce also gets better after a day in the fridge!
