Pina Colada AM Smoothie

OK, It’s been a while since I’ve posted a food blog, but I’m getting back into the world of blogging for fun, and I have a recipe that is exactly that – fun!  It’s a pina colada recipe for breakfast, the best way to start off your day, whether you live in the tropics or not!

Here’s my disclaimer- I don’t measure the ingredients as I put them in  – this is a smoothie, so just make it how you like!  This is just a suggestion!

Pina Colada AM Smoothie

  • 1 cup broccoli 
  • 1 cup pineapple (fresh or canned)
  • 1 cup coconut milk (refrigerated kind, not out of a can, i think that’s thicker?)
  • 1 or 2 bananas
  • some ice if needed (if broccoli and bananas are frozen, may not be needed)
  • and any of these Power Boosts:
  • omega oil
  • chia or flax seeds
  • protein powder
  • yogurt

The best part is you cant taste the broccoli at all, and it only barely turns the drink green.  Stick in a tiny umbrella and enjoy!

Good Maui Morning Smoothie

As you’ll come to find out, the morning smoothie is our go-to breakfast in this house.  It’s quick, portable, healthy, and can be made with almost any fruits and vegetables you have in the house.   You can add yogurt or protein powder and it will keep you going strong all morning long.  The disclaimer to this post and recipe is that we use the Vitamix, and I can’t comment on how this will taste if you use a regular blender- but if you can, please do!   The Vitamix puts the ‘smooth’ in smoothie.  It stays on my counter right between the toaster and the coffee maker, and I use it all the time.

Enough of my commercial for Vitamix, here is this morning’s smoothie recipe:

Good Maui Morning Smoothie

  • 4 cups Lettuce
  • 2 cups chopped Pineapple
  • juice 1 Lime
  • Water and Ice as desired.
